Can you use lets say the cowboys in dark on offense and then
Miami in white on defense?

You cannot.

Has to be the same team, both sides.

You cannot do that BUT you can use one team is all the same uniforms. If you have a (22) man Cowboys team in all the same uniform you can use that.
