However on a serious note, Al I have observed this in the past because someone brought it to my attention some years ago. If i may indulge the story....
... in those days, my teams were maybe 20 players total. Within that I used only one O-line/D-line - 5 guys that played the game both ways. So while I am playing Dale Smith he asked my "had I noticed my line getting tired during the game?" while I said no and thought nothing else about it until the next time we played and paid attention to the fact...well sure enough they started having the effects that you described Al...
Now let me ask you one question Al .... Are you playing both ways ... meaning that the offense plays defense too??
Go to 35 plus players and use subs and that way they will be fresh players.......
