Larue would be best to answer the question as to the number of plays per game.
If I remember correctly, they use a 35 minute running clock for each half. When the 35 minute clock expires they then run 5 additional plays.
All of the coaches set up very quickly and once the offense and defense are set there are no additional adjustments made at any time. This eliminates a lot of the time that it takes to run each play. As far as I could see they get in lots of plays in a short amount of time.
