Default Game play for 100 plays usually...

take 2.5 to 3 hours, just like in regular Shootout play. Because their are only 2 audibles per half, that cuts down on the audible at every play. I have a playbook that is used at the start of every play and players are preset in the formation they will run.

Some playbooks are larger than others It depends on the teams. I found a company that had every NFL team's playbook dating back to the early 70's and I design my teams based on those playbooks. For each game, I selected 100 plays from those playbooks to create for the league.

I since decided just to take 100 plays and make them the league playbook. The Box determines the plays. One compartment of the Box has a dice for 100-sided. On every play, the Box is shaken to determine the actual play. The Offense sets up in that formation to run the play. The defense can set up in its standard set, exotic set, or stacks. Just depends on down and distance.

I think one reason Lenny Moore had 257 on the Dolphins is because they ran a soft 3-4 back in the 70's. Gap control was important. The Baltimore Colts strength was its O-line. With Jim Parker, Chris Hinton, Ray Donaldson and company, they would open massive holes where the 3-4 had gaps. The play call would call for a dive to Lenny Moore or a sweep by Ameche and thus, the holes would open.

Griese strength was in the passing game in this game. I think he went 13-16 for 289 yards and a passer rating of 150 plus! That was off the charts. The Dolphins had a crucial turnover going in on a 10 play (I think) drive and fumbled the ball at the one.

Sorry, I digressed to this, but it shows that in the 3 hours, so much stuff happened that adds to the excitement of the game. Three hours is on par with competition Shootout play so I am use to the "long" games in some people eyes because it allows for both quantity and quality of play.
