Default moving up from the "iron man squad"

OK, I returned the the game last year after having played as a kid 35 years or so ago. I play solitaire and with a buddy on occassion. I have tweaked some bases, mostly because I wanted to know and control what direction they are going to run, I have seen some much better and smoother movement, as well as a definite improvement in direction control. I am ready to move on to coaching with a bigger squad at my disposal instead of the iron man squad, playing both offense and defense.

I see coaches on DVDs and the Internet with a squad set up on the board and they will have another 20 or so players on the sidelines.

Can someone give me a basic breakdown on their teams, as to what bases are tweaked for and at what postion, that makes so many players necessary?

I am thinking the basic five guys of an offensive and defensive line would be used to play both sides, where as I can see the need for different moving players at the other positions.

Is there a common leage rule where the offense is one jersy color and the defense is another jersey color? I want to paint/decal up an expanded roster and tweak the bases but I have no idea how to put together a team at the level I see all the leagues playing at.
