On a watts or 308 board, what do you consider a high percentage comfortable pass ?

Where do you say to yourself the reciever has gone too far downfield to attempt a high percentage pass.

Also, when your practicing, do you practice with receivers 30 to 40 yards downfield with the qb inthe pocket and players around your hands.
